NECCO Chocolate Mint Cookies

We love local flavor at Mom's Lifesavers and around here NECCO is just that!

This year I resolve to spend more time in the kitchen with my kids, making memories - these cookies are just the beginning!

Christine and I grew up on NECCO candies and love that NECCO is still a New England tradition - we even went to visit their candy store this past month - check out the post here.
While we were there we picked up some Haviland Thin Mints - these mints are incredible - made with all natural, gluten-free ingredients and premium 63% cacao chocolate. They are the perfect after dinner mint OR in this case, cookie topper!
We found this recipe on the NECCO Candy Blog and had to give it a try.
What I loved most about making this cookie was the time spent with my daughter - we measured all the ingredients together and used the time in the kitchen to catch up on all that is going on in her active little world - this time together made the cookies even sweeter.
