Breakfast & Lunch Solutions - Mini Quiches!

Quick and easy recipe.
Make them your way - have the kids customize their own!
These make a great morning starter for the kids and are perfect for school lunch boxes.
I have even made them for appetizers at a party!
The ingredients are simple:
*Mini Fillo Shells - we found our in the freezer section of our local grocer near the frozen pie shells
*Eggs
*Cheese - we used a pre-shredded cheese medley
*Fillings - we used bacon crumbles, diced ham - veggies would be great too!
*Salt & Pepper to taste
*Preheat oven to 400 degrees

TIP - We made some in our Mom's Lifesavers test kitchen and one suggestion from 'Dad' (who knows a few things about cooking) was to add a little cream to the egg mixture to make them even fluffier.

 The shells came in a plastic tray - remove them from the tray and lay them out on a cookie sheet. Gather your ingredients and start by placing 'fillings' inside cups.
 
Beat several eggs along with salt and pepper to taste and ladle over filled pastry cups.
Bake at 400 degrees Fahrenheit for 10-12 minutes until cooked through. 
These mini quiches can be served hot or cold. 

Note- I saw these in the print, September 2013 issue of Rachel Ray's Magazine  under the title 'Mini Meaty Cheesy Quiches' - I was unable to find an online resource/reference link to share with you.
